Masala-Spiced Roast Chicken

INGREDIENTS
  • 1 (3 pound) whole chicken, giblets removed
  • 10 cloves garlic
  • 1/4 cup garam masala
  • 1 lime

INSTRUCTIONS

1. Preheat oven to 425 degrees F (220 degrees C).
2. Place chicken upright on a rack in a roasting pan. Cut 10 slits in the skin using a sharp knife, pull the skin away from the meat; slip a garlic clove into each slit. Rub the masala powder over the whole chicken. Squeeze the juice of the lime over the chicken, turn the chicken breast side down in the roasting pan, and place the rind in the chicken cavity.
3. Roast the chicken in the preheated oven for 20 minutes. Lower the oven to 350 degrees F (175 degrees C), and bake until no longer pink at the bone and the juices run clear, about 45 more minutes. An instant-read thermometer inserted into the thickest part of the thigh should read 180 degrees F (82 degrees C). Remove the chicken from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area for 10 minutes before slicing. INGREDIENTS

* 1 (3 pound) whole chicken
* 1 large onion, halved - unpeeled
* 3 carrots, cut into chunks - unpeeled
* 2 stalks celery, cut into chunks
* 1 tablespoon whole peppercorns
* water to cover

INSTRUCTIONS

1. Place chicken in a large pot with onion, carrots, celery and peppercorns; add water to cover. Cover pot and bring to a boil; reduce heat to a gentle boil and cook for about 90 minutes, or until chicken meat is falling off of the bone. Remove chicken, let cool and shred or chop the meat. The oven baked whole chicken is ready ! Nice !

OVEN - BAKED CHICKEN CACCIATORE OVER FETTUCCINE

INGREDIENTS
  • 1 lb. boneless, skinless chicken breast halves
  • 1 (16 oz.) can low-sodium tomato sauce
  • 1 (16 oz.) can stewed tomatoes
  • 1 onion, chopped
  • 1 yellow pepper, sliced
  • 1 (4 oz.) can black pitted olives, drained
  • 2 tsp. Italian seasoning
  • 1/2 lb. spinach fettuccine

INSTRUCTIONS
Preheat oven to 375 degrees. In large roasting pan, combine first 7 ingredients. Bake uncovered 25 minutes until chicken is cooked through. Meanwhile, prepare pasta according to package directions.
To serve, place drained pasta on serving platter; top with chicken mixture. Serve with bread sticks, Italian or French bread. The oven baked whole chicken is ready to serve....enjoy the chicken...nice !

OVEN BAKED WHOLE CHICKEN AND BISCUITS

INGREDIENTS
  • 1 c. flour
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 2 tsp. paprika

INSTRUCTIONS
Heat oven to 425 degrees. Mix above ingredients in a paper bag.
Place 1/2 cup shortening (half butter) in 13"x9" oblong pan and set in oven to melt. Shake 3 or 4 pieces of chicken at a time in bag to coat thoroughly. Place chicken, skin sides down in single layer in hot shortening. Bake 45 minutes. Then turn. Meanwhile, make dough for biscuits. Roll dough 1/4", cut into biscuits. Drain No. 2 1/2 can cling peach halves and place a whole clove in each.
Push chicken to one end in pan; place biscuits in single layer on other end. Place pecan halves on top of chicken. Bake another 15 minutes, or until biscuits lightly browned and chicken tender.
To Make Gravy: Remove chicken, peaches, biscuits and biscuits to serving platter and add 2 tablespoons flour, saved from (dredgings) to drippings in pan. Bring to boil and add about 1 1/2 cups hot milk. Boil 1 minute. The oven baked whole chicken recipe is ready to serve ....nice ! Enjoy it !

OVEN BAKED CHICKEN SALAD ..try this oven baked chicken recipe !

INGREDIENTS
  • 2 c. diced, cooked chicken
  • 1/2 c. slivered almonds
  • 1 (8 oz.) can water chestnuts
  • 1 (2 oz.) pimiento, chopped
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 2 tbsp. lemon juice
  • 1/2 c. crumbled French fried onion rings
  • 3/4 c. shredded cheddar cheese
  • 2 tbsp. sherry
  • 1 c. mayonnaise
  • 1 tsp. curry powder

INSTRUCTIONS
Preheat oven to 350 degrees. Mix all ingredients except onions and cheese. Put in casserole, top with onions and cheese and bake 30 minutes. Nice lunch dish. This can be frozen ahead. The oven baked chicken is ready...! Enjoy it !

INGREDIENTS
  • 1 (3 lb.) broiler, fryer, cut up
  • 1 lb. Italian sweet peppers, preboiled 5 minutes & peeled
  • 1 can or fresh mushroom slices, drained, if using canned
  • Salt
  • Pepper to taste
  • Garlic powder
  • 1 qt. jar prepared spaghetti gravy
  • 3 ripe tomatoes, preboiled 3 minutes and quartered
  • 1 lb. can tomato wedges or slices, drained

INSTRUCTIONS
In casserole, glass oven dish or roaster, place chicken parts skin up. Put generous dab of thick gravy on each. Cover lightly with foil and bake about 45 minutes to 1 hour at 325 degrees. Meanwhile, prepare peppers, tomatoes, and mushrooms, salt and pepper and garlic powder to taste. Top all with additional gravy. Continue baking, uncovered 45 minutes to 1 hour longer. Serve with own gravy on macaroni or spaghetti. Can be prepared ahead and reheated. Increase
ingredients for each chicken if done in large batches for company. The oven baked whole chicken is ready to serve...great taste !

PEACHY OVEN BAKED CHICKEN AND BISCUITS

INGREDIENTS
  • 1/4 c. shortening
  • 1/4 c. butter
Place in 9x13 inch pan. Melt in oven.
  • 1 fryer chicken, cut up, wash thoroughly, pat dry with paper towel
  • 1 c. flour
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 2 tsp. paprika

INSTRUCTIONS
Mix flour, salt, pepper, and paprika in a paper bag. Shake 3 or 4 pieces chicken at a time, to coat completely. Place, skin side down, in single layer in baking pan. Bake 45 minutes, then turn over. Bake 15 minutes.

Meanwhile, drain 1 large can of peach halves; place a whole clove in each. Set aside.

BISCUITS:
  • 2 1/4 c. Bisquick baking mix
  • 2/3 c. milk
INSTRUCTIONS
Mix until dough forms; beat 30 seconds.
When chicken has baked a total of 1 hour, push to one end of pan.
Drop biscuits on other end. Place peach halves on top of chicken.
Bake another 15 minutes or until biscuits are browned.
The oven baked whole chicken is ready to serve...4 persons....enjoy it !
